Document Description
CDCR is planning to install two additional blast chillers in the main kitchen at WSP to accommodate the food service demands of the existing inmate population. Currently, WSP has five-blast chiller units continually working beyond the manufacturer's recommended capacity. In addition, WSP must also use conventional cooking methods to fully meet the food production demands of the increased inmate population. Conventional cooking methods are not in accordance with institutional design and approved practices. Installing two additional blast-chillers will reduce the down time associated with repairs to the existing blast-chillers and eliminate the need to routinely produce food with conventional cooking methods. The two new blast-chillers will be installed in existing space on the main floor of the main kitchen and the condensing units will be installed outside the building.
