The purpose of this PIER contract is to develop a novel commercial gas fryer that reduces energy costs, improves performance and reduces oil consumption. Additionally, this project will characterize instantaneous water heating technology in the California marketplace, project potential market growth and energy savings, identify barriers and recommend strategies for next-generation technology.
