The project sponsor has proposed a winery that would be located within caves that have been recently excavated. These caves are proposed to house winery operations (crushing, bottling, and storage), winery offices, and living quarters for up to six people. Living quarters for up to 12 temporary workers and facilities for composting wine waste are also proposed on the property.
