Document Description
A request to construct a new winery with an annual production capacity of 35,000 gallons in one phase within approximately 50,000 square feet of caves. The construction of the caves is not subject to County approval, and the physical construction of the caves are not part of this project. Approval for the construction of the caves has been obtained from the State Department of Industrial Relations, Division of Occupational Safety and Health, Mining and Tunneling Unit. Cave spoils are proposed to be removed from the property. An underground winery process wastewater treatment system is proposed, and treated wastewater will be used for vineyard and landscape irrigation. Tours and tasting by appointment are proposed and a marketing plan is also proposed.
