Document Description
A request to construct a new winery with an annual production capacity of 35,000 gallons in one phase within approximately 50,000 square feet of caves. The applicant has already received approval from the State of California for the excavation needed to create the caves in which the winery will be located and the physical construction of the caves are not part of this project. Tours and tasting by appointment are proposed and a marketing plan is also proposed. Cave spoils are proposed to be deposited on the winery parcel and adjoining parcels under control of the applicant. An erosion control plan with mitigations will cover the grading for the cave portals, roads, parking areas and spoils areas, including the planting of vineyard in the cave spoil areas.
